Many years ago, in the 1970’s or 80’s, there was a restaurant in Jeffersonville, Indiana,
on Court Avenue, called Ray Parrelli’s Italian Restaurante. Besides all of his other
delicious dishes, his Minestrone Soup was mine and my husband’s favorite. He told us
once that it cooked all day and he started early by making the broth. It had a rich
tomato broth, but also some small beef chunks, which I think had been cooked to produce
beef broth also. It also had the usual ingredients, cannelli beans, green beans, zucchini,
onions, celery, garlic, and some type of small pasta. He served with warm garlic buttered
breadsticks. Absolutely nothing better on a cold night!
I’ve tried to recreate from memory, but can not replicate this delicious soup.
Thanks!

Hi Linda,
Sorry, I can't find this. I only found a couple of brief mentions of Parelli's Restaurant
in Jeffersonville and nothing about the minestrone soup.
I will post this for reader input.
