Hello I sure hope you can help. I ate at Morrison's cafeteria so many times
at 100 Oaks Mall Nashville TN. They had a really good carmel pecan pie .
The chef gave me the recipe and I mis placed it when I moved. I know it
had a can of eagle brand condensed milk and pecans and was baked in graham
cracker crust. I have searched all sites and can't find it. It was so simple
but so good. Do you remember this pie?
I don't remember this pie, but that's not surprising because I always got the egg custard pie
I have an actual Morrison's kitchen manual from the late 1950s or 1960s, but it does not have
any sort of caramel pecan pie recipe. I have a great Morrison's contact, a former manager who
has a much more recent edition of the kitchen manual, and the below recipe called "Morrison's
Condensed Pecan Pie" was in it. This is the food service recipe and makes 7 pies. You will have
to cut it down to make one pie. The recipe that you were given before may have been already cut
down for home use by that chef.
Morrison’s Condensed Pecan Pie
YIELD: 7 pies
9 x1 1/4 pie pan
2 lbs graham cracker crumbs
1 lb sugar
1 lb oleo, room temperature
Blend graham cracker crumbs, sugar and oleo smoothly on a mixer. Press crumb mixture evenly
on bottom and sides of seven pie pans, molding to the pan, but not packing.
Bake crusts at 350 for five minutes. Set aside
11 lbs, 4 oz condensed milk.
1 lb light brown sugar
2/3 oz salt
1 oz. vanilla extract
Combine all ingredients and cook until thickened.
Add 1 lb. 8 oz. chopped pecans to filling.
Pour mixture into reserved crusts and chill. Cut into eight equal pieces
and serve on dessert plate.
