Hi Marilyn,
Miguel's is a chain with seven locations, mostly in the San Diego area.
Their menu is here: Miguel's Cocina
On the menu, their shrimp enchiladas are described like this:
Shrimp Enchiladas
Shrimp sautéed with salsa fresca, rolled into corn tortillas, topped with
jalapeño white sauce & avocado slices
There is a recipe here that the author says she found on the web:

It would not surprise me if these recipes were actually copycats rather
than the actual Miguel's recipe, but they might be very similar to Miguel's.
I did not have any success looking for a recipe that was verifiably from Miguel's.
I had no success searching for Miguel's salsa fresca recipe, but someone remarked
that it was like "Pico de Gallo".
I will post this for reader input.
