There is no recipe in my copy of the Morrison's Kitchen Manual that exactly fits your description of orange jello, carrots and pineapple. However, their below "Sunset Salad" recipe seems very similar to your description except that it calls for lemon jello. Perhaps you can substitute orange jello for the lemon and it will be what you remember. This is, of course, a food service recipe that makes a large quantity. You will have to cut it down for home use.

Sunset Salad Lemon Jello: 1 pound, 8 ounces Hot water and canned pineapple juice(130°F): 6 pounds, 10 ounces Drain juice from pineapple and add enough hot water to the juice to make 6 pounds, 10 ounces liquid. Dissolve the Jello in the hot water and pineapple juice. Chill. Grated Raw Carrots : 1 pound, 8 ounces Canned Crushed Pineapple(drained): 2 pounds Salt: 2 & 2/3 teaspoons Combine the carrots, pineapple and salt. When the Jello is slightly thickened, fold in carrot and pineapple mixture. Turn into individual molds. Chill until firm. Unmold onto crisp lettuce leaf. Portion weight: 4 ounces in individual molds
