We do not have a copy of any Betty Crocker Christmas Cookbook. The only posted textual copy of "The Betty Crocker Christmas Cookbook" that I can find online is one dated 1988. However, the first publication of a cookbook with that name was in 1982.
There is a recipe with the name "Winter Fruit Salad" in that 1988 edition of "The Betty Crocker Christmas Cookbook." However, that recipe is nothing like your description. See below for that recipe from 1988.

Winter Fruit Salad 4 oranges or 2 grapefruit Spinach leaves 1 ripe avocado 1/2 cup whole cranberry sauce 1 large red apple, sliced Lime-Honey Dressing (recipe below) Lemon juice Pare and section oranges. Cut avocado lengthwise into 1/4-inch slices. Sprinkle avocado and apple slices with lemon juice. Arrange orange, avocado and apple slices on spinach. Spoon cranberry sauce into center. Serve with Lime-Honey Dressing. Lime-Honey Dressing 3 tablespoons frozen limeade or lemonade concentrate, thawed 3 tablespoons honey 3 tablespoons vegetable oil 1/4 teaspoon poppy seed Shake all ingredients in tightly covered jar; refrigerate.
