Olive Garden Chicken Gnocchi Soup

1 TBS olive oil
4 TBS butter
1 cup chopped onion
1/2 cup chopped celery
2 cloves finely chopped garlic
1/2 cup flour
1 quart half & half
14 oz chicken broth
1 cup cooked & chopped chicken
1/2 tsp parsley
1/2 tsp thyme
1/4 tsp nutmeg
1 tsp salt
1 cup shredded carrots
1 pack gnocchi (? amount)
1 cup chopped spinach
In a large pot, add oil & butter and let melt
add in onion and celery & let cook a few mins.
Stir in flour and half and half and add garlic.
Simmer until thickened. Pour in chicken broth.
add in chicken. Stir in parsley, thyme, nutmeg
and salt. add carrots, gnocchi, and spinach.
let simmer 10 minutes, then serve.
