Basic Salmon Croquettes or Patties 1 can pink salmon 1/2 c. bread crumbs or cracker crumbs 1 egg, beaten 1/2 tsp. baking powder 1/4 tsp. black pepper Open can of pink salmon into mixing bowl. Mix until salmon is not firm. Add bread crumbs or cracker crumbs and beaten egg. Mix all together well. Add baking powder and black pepper. Mix until firm when touched. Form into patties. Pat until flat and well formed. Prepare frying pan with cooking until hot. Slowly place patties in frying pan and cook until brown on both sides. There are dozens of variations. Servings: 16 ounce can salmon makes 6-8 patties. 8 ounce can salmon makes 4-6 patties.
