Basic Creamed Chipped Beef

Basic Creamed Chipped Beef	 

1/2 stick butter
1/2 c. plain flour
3 to 4 c. whole milk (can be skim or 2% or reconstituted evaporated)
1 (2.25 oz.) jar sliced dried beef (even better using leftover roast beef)
6 to 8 slices white bread

Melt butter; add flour, heat and stir until light-colored and bubbly. Do not brown. 
Add milk, stir until it thickens. Add more or less milk to make it the thickness you like. 
Cut beef into 1/2-inch squares, or tear it into small pieces. Add to sauce. 
Make toast. Spoon sauce on toast.
Serves 6 or will serve 1 person 6 times for breakfast by reheating in microwave.
