Old Fashioned Banana Pudding

Old Fashioned Banana Pudding	 

3/4 c. sugar (1/2 & 1/4 c.)
2 tbsp. flour
1/4 tsp. salt
2 c. milk
3 eggs, separated
1 tsp. vanilla extract
Vanilla wafers
6 med. ripe bananas

Mix flour, salt and 1/2 cup sugar. Put in top of a double boiler and add milk slowly. 
Stir constantly over boiling water until thickened. Occasionally stir while cooking 
15 minutes more uncovered. Beat egg yolks in bowl and stir into custard mixture 
gradually. Return to heat. Stir constantly and cook 5 minutes more. Remove from 
heat and add vanilla extract.
Line bottom of 1 1/2 quart casserole dish with wafers, banana, custard mix repeat 
twice ending with custard on top. Beat egg whites until stiff (not dry). Slowly add 
1/4 cup sugar. Whip until stiff peaks are formed. Spread on top of pudding and 
bake in preheated oven 425 degrees for 5 minutes until brown. 
Serve immediately or serve cold.
