Sorry not an actual recipe, but in this “Chi-Chi’s Diablo Sauce” recipe, in the
comment/review section about 9 reviewers down was a review with their version
of the “Soft Taco Enchilada Style.”

I miss Chi-Chis so much. Thank You...soft taco enchilada style was my favorite.
Im making this again tonight. My husband doesn't eat chicken so I use beef instead,
(shredded beef roast) So I throw the beef in the oven on low and start the diablo
sauce. I marinate the beef (rare) in the diablo sauce. cook till beef is done.
Shred beef. Then I grab a flour shell, add meat and Spanish rice wrap it like a
burrito, add the diablo sauce on top with a little cheese and bake it for 15 minutes.
There you have soft taco enchilada style from Chi-Chis!
