Mrs. Winner's Best Fried Chicken (Copycat)

Ingredients

For the Chicken and Dry Rub:
1 small organic chicken, cut into 10 pieces
1 tbsp salt
1 tbsp black pepper
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp cayenne pepper

For the Wet Batter and Flour Mixture:
3 eggs
1 cup buttermilk
1/4 cup water
Flour or gluten-free flour blend (for coating chicken pieces)
2 tbsp cornstarch
Salt (to taste)
Pepper (to taste)
For Frying:
Peanut oil (for frying)

Instructions:

Prepare the Dry Rub: Combine salt, black pepper, garlic powder, onion powder, and 
cayenne pepper in a small bowl.
Season the Chicken: Place chicken pieces in a resealable bag, add the dry rub, seal, and
toss to coat. Refrigerate overnight.
Prepare for Frying: Two hours before cooking, remove chicken from the bag and refrigerate 
uncovered to dry the skin.
Heat the Oil: Heat 1/2 inch of peanut oil in a cast iron skillet to 360°F, monitoring with a thermometer.
Create the Wet Batter and Flour Mixture: In one shallow dish, mix eggs, buttermilk, and water. 
In another shallow dish, combine flour and cornstarch, and season with salt and pepper.
Coat the Chicken: Dip chicken pieces in the buttermilk mixture, let excess drip off, then 
transfer to the flour mixture to coat completely, shaking off excess flour.
Fry the Chicken: Carefully place coated chicken in the hot oil, avoiding overcrowding. 
Fry until golden brown, turning as needed.
Check for Doneness: Use a meat thermometer to check the internal temperature, which should 
reach 165°F. If needed, reduce heat and continue cooking.
Drain and Serve: Transfer cooked chicken to a wire rack over a baking sheet to drain and 
maintain crispness. The baking sheet can be kept in a warm oven.
This recipe aims to replicate Mrs. Winner's fried chicken with a flavorful dry rub, tenderizing 
buttermilk soak, and a crispy flour and cornstarch coating.
