Gemini: Julia Child’s "Soup in a Pumpkin" (inspired by the classic French Le Potiron Tout Rond) is a savory, chunky fall dish featuring onions, bread crumbs, Gruyère or Swiss cheese, and chicken stock baked right inside a hollowed-out pumpkin.

Ingredients:

1 whole pumpkin (about 6 to 7 lbs, cleaned with the top/lid reserved)
4 Tbsp butter (softened or melted)
1 large yellow onion (or 4 small onions, finely chopped/minced)
1 cup dry white bread crumbs (or Italian seasoned bread crumbs)
4 oz to 8 oz shredded Swiss or Gruyère cheese
2 quarts (or enough to fill) hot chicken stock/broth
Herbs and spices: Pinch of salt, ground black pepper, 1/2 tsp ground sage, and a pinch of nutmeg
1 bay leaf
(Optional) 1 cup heavy cream or half-and-half stirred in right before serving

Directions:

   1. Prep the Pumpkin: Preheat your oven to 400°F. Cut a neat lid off the top of the pumpkin and scoop out all the seeds and stringy pulp. Rub the inside, the rim, and the underside of the lid with softened butter and a light pinch of salt. Place the pumpkin on a rimmed baking sheet (or inside a heavy ovenproof casserole dish for safety).
   2. Cook the Onions: Melt butter in a skillet over low-to-medium heat. Add the chopped onions and cook for 10 to 15 minutes until tender and translucent (do not let them deeply brown).
   3. Add Bread Crumbs: Stir the bread crumbs into the warm onions for 2 minutes until the butter is absorbed. Remove from heat and mix in the sage, salt, pepper, nutmeg, and half of the grated cheese.
   4. Assemble Inside the Pumpkin: Pour hot, simmering chicken stock into the hollowed pumpkin until it is filled to about 1 to 2 inches from the top. Add the onion and bread crumb mixture, the rest of the cheese, and drop in a bay leaf. Put the pumpkin cap/lid back on.
   5. Bake: Bake at 400°F for 1.5 hours, then lower the temperature to 350°F and bake for another 30 minutes, or until the pumpkin flesh is tender when pierced with a fork but still holds its structural shape.
   6. Finish and Serve: Remove the lid and bay leaf. Gently stir in the heated heavy cream (if using) and fresh parsley. Ladle the soup out into bowls, making sure to scrape some of the soft, savory pumpkin flesh from the inside walls into each serving.
