Morrison's Cafeteria Dirty Rice
This recipe yields 24 servings.
Rice 1.5 lbs
Oil .5 lbs
Wash rice and drain. Place oil in saute pot. Then fry the rice until it begins to brown.
Onions 1.5 lbs
Bell Peppers 3.25 lbs
Parsley .5 bunch
Green Onions .5 bunch
Add finely chopped onions, bell peppers, parsley and green onions.
Chicken Livers .5 lbs
Chicken Giblets .5 lbs
Coarsley grind chicken livers and giblets and add to frying mixture.
Continue to fry until rice is golden brown.
Chicken Stock 1.5 quarts
"Accent" 1 Tablespoon
Add stock and "Accent," stir and bring to a boil.
Boiled Eggs 4
Chop eggs and add to the mixture.
Put a tight top on the pot and lower heat to a "slow fire"(simmer)
for about 25 to 30 minutes. Stir occasionally.
To adjust the "Dirty Rice" recipe from 24 servings down to 8,
you will need to divide all the ingredient amounts by three
(24 servings / 8 servings = 1/3).

Onions 1 large Bell Peppers 2 large Parsley about 1/2 cup chopped Green Onions about 3 Add finely chopped onions, bell peppers, parsley and green onions.
Chicken Livers about 2-2/3 oz
Chicken Giblets about 2-2/3 oz
Coarsely grind chicken livers and giblets and add to frying mixture.
Continue to fry until rice is golden brown.
Chicken Stock 2 cups "Accent" 1 teaspoon Add stock and "Accent," (Accent is monosodium glutamate) stir and bring to a boil.
Boiled Eggs 1 large or 2 small Chop eggs and add to the mixture.
Put a tight top on the pot and lower heat to simmer for about 25 to 30 minutes. Stir occasionally.
