Sorry, I could not find a recipe for Horn & Hardart's Hamburger Steak and gravy.
I did find a comment that it was fried in lard. The gravy is referred to as
"vegetable gravy" on menus, but I could not find anything about it.
In checking articles about Horn & Hardart and scans of H & H menus, I found three
dishes that someone might call "hamburger steak." I could not find recipes for any
of them. Below is what I found:
hamburger steak came with macaroni and cheese, vegetable gravy and fresh beets
Despite being fried in lard, even their hamburger steak in sauce compares favorably in some nutritional categories to modern McDonald’s hamburgers.

I don't see their Salisbury Steak recipe.
Sorry, I do not have this recipe, and I don't think it is available. I searched for the H & H
Hamburger Steak/Salisbury Steak recipe in 2019 with no success, and I searched again today with
similar lack of success. I have never been able to locate a copy of a recipe pamphlet from H & H
from the Daily News or elsewhere.
