Boston Molasses Recipes, 1920s

New England Indian Pudding Recipe

4 cups milk
1/2 cup Indian meal (course corn meal)
2/3 cup molasses
1/2 teaspoon salt
2 cups cold milk

Scald 4 cups milk, add Indian meal slowly, stirring constantly until thick, then add 
molasses and salt. Remove from heat, put in buttered baking dish and add 2 cups cold milk. 
Bake in slow oven 300 degrees Fahrenheit, for 3 hours. Serve warm with plain cream or 
vanilla ice cream. Variations include: adding a half teaspoon of cinnamon and ginger if 
spicy pudding is desired, or add one cup of figs cut in thin strips before baking.

Indian Pudding, Boston Recipe

2 heaping Tbs. corn meal
1/2 cup sugar
1/2 tsp salt
1/2 cup molasses (Use Grandma's no other brand, especially the southern ones)
1 TBS butter
1 quart of milk

Place milk and butter in a saucepan.  Scald milk.  Mix sugar, molasses
and cornmeal in a 2 1/2 quart baking dish.  Add scalded milk slowly,
stirring well.  Bake 2 hours at 350 degrees, stiring every half hour.  The
cornmeal will tend to lump up, and when you stir it, break up all the
lumps.  The pudding will be done when it is brown and looks like Indian
pudding.  Serve hot or cold with ice cream or whipped cream.

Use whole milk and don't cover the puddin while it cooks.

Baked Indian Pudding
Recipe from: The Durgin-Park Cookbook

Servings: 6

1 1/2 plus 1 1/2 cups milk 
1/4 cup black molasses 
2 tablespoons sugar 
2 tablespoons butter 
1/4 teaspoon salt 
1/8 teaspoon baking powder 
1 egg 
1/2 cup yellow cornmeal 

Preheat the oven to 450 degrees F. 
In a bowl mix 1 1/2 cups of the milk with the molasses, sugar, butter, salt, baking powder, 
egg, and cornmeal. Pour the mixture into a stone crock that has been well greased and bake 
until it boils. 
Heat and stir in the remaining 1 1/2 cups milk. 
Lower the oven temperature to 300 degrees F and bake for 5 to 7 hours. Serve warm with whipped 
cream or vanilla ice cream. 

Peanut Butter Oatmeal Pie

Hello Lorie,

No recipes recipes from the Town Diner, but below are two others.

Oatmeal Peanut Butter Pie   

1 c. unsifted flour
1/2 tsp. soda
1/2 c. sugar
1/2 c. brown sugar
1 c. oatmeal
1/2 c. soft butter
1/2 c. peanut butter
1 lg. egg

Frosting:

Mix well: 1 3/4 c. powdered sugar 2-3 tbsp. milk 1 tsp. vanilla 1/4 c. peanut butter
Generously grease 13x9x2 pan. Stir together flour and baking soda. Stir in sugars and oatmeal. 
Add peanut butter, butter and egg. Mix until crumbly. Press into bottom of 13x9x2 pan. Bake 
in preheated oven 350 degrees about 25 minutes (watch closely). Let cool. Frost with frosting.

Peanut Butter Oatmeal Pie

3/4 cup sugar
3/4 cup corn syrup -- light or dark
1 1/4 cups oatmeal
1 stick butter or margarine -- melted
1 tsp Wonder brand flavoring --- or vanilla extract
2 eggs -- beaten
3/4 cup peanut butter -- creamy
1 9" pie crust

Mix sugar through eggs together. Stir in peanut butter. Let sit about 15 minutes to allow 
the oatmeal to soak up the filling a bit. Pour into pie crust. Bake at 350 degrees for 
45 to 50 minutes. Cool a bit before cutting. 

Use any pie crust you like (or none at all; the pie sets up quite firm once it cools). 
I like the peanut butter pie crust for this pie. 

Peanut Butter Pie Crust: 
1-1/2 cups pulverized peanut butter cookies (including the filling). Add 5 TBSP melted butter, 
mix together. Pat into pie shell & pre-bake for about 8-10 minutes at 350 degrees F.

Russian  Coffee  Cake

--Cake:--

3 c. sifted flour
1/2 lb. (1 c. ) butter or margarine
2 c. sugar
3 eggs
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 pt. sour cream

--Topping:--

1/2 c. sugar
2 tbsp. cinnamon
1 c. chopped nuts (pecans or walnuts)

Cream butter, sugar, eggs and vanilla.  In separate bowl sift dry ingredients. 
Add alternately with sour cream to creamed mixture.  Pour 1/2 of batter into 
greased 9 x 13 pan and sprinkle 1/2 topping over it.  Add rest of batter, then 
cover with rest of topping.  Bake at 325 degrees, 45 minutes to 1 hour.

There is no strawberry walnut quick bread recipe on the Bon Appetit website. There is no strawberry walnut quick bread recipe on the Epicurious website, which has the Bon Appetit archives. There is no strawberry walnut quick bread recipe on the general Internet via Google that mentions Bon Appetit magazine.

If the recipe has been posted on the Internet by someone without mentioning that it is from Bon Appetit magazine, then I need a unique name or a list of unique ingredients in order to find it.

Fresh Strawberry Quick Bread

Ingredients
1 pint fresh strawberries, washed and hulled  
1-3/4 cups bread or all-purpose flour  
1 tsp baking soda  
1 tsp salt  
1/4 tsp baking powder  
3/4 cup sugar  
1/3 cup butter or other shortening  
2 eggs  
1/3 cup water  
1/2 cup chopped walnuts  
Cream cheese, softened (optional) 

Baking Pan 
1 medium (8 1/2"-x-4 1/2") loaf pan, greased or Teflon, long sides and 
bottom  lined with buttered wax paper. 
Preheat 
Preheat the oven to 350. 
Preparation 
5 mins. 
Crush enough of the strawberries to fill 1 cup. Pour into a small saucepan  
and heat over a medium flame. Cook for 1 minute, stirring constantly. Cool. 
 Slice the remaining strawberries and chill. 
By Hand 
8 mins. 
In a medium bowl combine the dry ingredients, except the sugar. 
In a large mixing bowl cream the sugar and shortening; then add the eggs 
and  water, mixing until light and fluffy. 
Add the flour mixture to the creamed mixture, mixing well to blend. Stir in 
 the crushed strawberries and walnuts. 
Pour or spoon the mixture into the prepared pan. 
Baking 350 
1 hour 
Bake for 1 hour, or until a pick inserted in the center comes out clean. 
(If using a convection oven, reduce heat 50.) 
Final Step 
Remove the bread from the oven. When the loaf has cooled in the pan for 10  
minutes, turn onto a rack to cool. 
Present to your guests thin slices spread with softened cream cheese and  
topped with the reserved chilled strawberries. Families will like it,  too.

About four years ago I requested Two long lost recipes,you sent me ones that 
were very close 
and I was able to modify them with what I remembered  from the originals.I have 
been meaning to send these to you and am embarrassed that it has taken so long.

The original recipe you sent me was for "Stuffed Wiener Rolls"I modified it and 
the new recipe is now called

Phaedrus Oven Cheesiest

2 Hard Boiled eggs
1/2 to 3/4 jar Stuffed Spanish Olives
1/4 cup Chopped Onion
1/4 Cup Oil
8 oz or more of grated cheddar cheese

Chop Hard Boiled Eggs.Mix all ingredients together in a large mixing bowl.
Spread thinly (Too thick and it won't cook all the way though)on hamburger bun halves.
Cook in the broiler,on tin foil until it begins to brown and gets a few black spots.

Second Recipe

You originally sent this to me as Stuffed Sandwiches

I modified it and it is now called

Phaedrus Oven Burgers

1 Lb Ground Beef
1/4 to 1/2 cup chopped onion
1 tsp sugar
8oz Swiss Cheese
1/2 cup or more Chopped or Sliced Black Olives
1/4 tsp garlic powder(optional)
Salt and Pepper to taste
Hamburger Buns

Brown the ground Beef,Onion,Garlic Powder,Salt and Pepper in a Skillet.Drain. 
After draining: Under a low heat add the cheese and olives and stir until the 
cheese is melted.
Spoon onto Hamburger Buns and wrap in Tinfoil and Bake in the Oven at 325 degrees
for about 1/2 hour or until very hot.

Leftovers freeze well but take at least 45 min to heat.
