Subject: Request for sweet cherry pie recipe

Dear Uncle Phaedrus,

The dearth of sweet (Bing) cherries at this time of year inspires me 
to try many sweet cherry recipes, and this year I'm inspired to find a 
recipe for pie made from fresh sweet cherries.

My search online finds many recipes for fresh sour cherries, which I have 
never had the pleasure of seeing my entire life (and that's a long time!). 
It seems as though "fresh sweet cherry pie" means "sour cherry pie with sugar"!

Other Bing cherry pie recipes require the familiar method of adding cornstarch 
to the fruit and then either cooking that mixture, or piling it into the uncooked 
pie crust and baking. The problem with that recipe is that Bing cherries don't 
produce enough juice to make that successful.

A new recipe from Cook's Illustrated calls for cooking fresh plum pulp with the 
cherries, but I haven't been able to find fresh plums anywhere. I have tried to 
find a replacement item--canned plums to puree, or plum baby food--but neither 
of those foods are available in grocery stores anymore!

Hello Christine,

The below sites have bing cherry pie recipes. Yes, a couple of them call for cornstarch, but as the photos show, the recipes were apparently successful.
