Pineapple Frozen Dessert

Subject: pineapple frozen dessert

My 90-year-old mother-in-law is remembering a dessert she made in the 40s & 50s. 
It definitely contained crushed graham crackers and crushed pineapple. The crackers 
were definitely not used to make a crust.  They were mixed in with the other ingredients. 
She put it in the freezer, possibly back in the graham cracker box as a form, and served 
it in slices.  She remembers it being very sweet, and a delicious dessert.  It did not 
involve any cooking of any ingredients.  Any ideas?

The below recipe is the closest that I can find to your description.

Phaed

Pineapple  Dessert  '93

1/2 c. butter
1 c. sugar
3 egg yolks, beaten
1/4 c. pineapple juice
1 c. crushed pineapple
1/2 c. nuts, chopped
14 graham crackers, finely crumbled

Cream butter and add sugar, egg yolks, pineapple and nuts.  Mix in alternately the 
cracker crumbs and juice.  Freeze 12 hours.  
Serve with whipped cream.  Serves 8 to 10.

one she used to make and can't believe you found it so fast.  I told her you were in

Half and Half Cookies

Half  And  Half  Cookies

1 c. sugar
1 egg, beaten
2 tbsp. vanilla
1/2 c. buttermilk
2 1/2 c. sifted flour
1/8 tsp. salt
1 even tsp. baking soda
2 tbsp. melted butter

Mix all ingredients.  Drop on greased cookie sheet 1 inch apart.  Have drops be 
2 1/2 inch wide (1/2 tablespoon) or can be made large for bigger cookies.  May 
add more milk to batter if dough is too thick.  Bake until lightly browned and 
cool and frost.  Bake at 400 degrees for 10-12 minutes.

Frosting:

2 c. confectioners' sugar
1/3 c. shortening
1 egg

Use half of frosting for white side.  Add cocoa to other half for chocolate side.

Garlic Parmesan Salad Dressing

Parmesan  Salad  Dressing

 1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
Dash dry mustard, optional
2 tbsp. grated Parmesan cheese
1 tbsp. lemon juice or red wine
   vinegar
1/4 c. salad oil

 Combine and mix well with fork.  Refrigerate until ready to serve. 
 Makes approximately 1/2 cup.

Garlic Salad  Dressing

 1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
Dash of dry mustard
1 tbsp. lemon juice
1/4 c. salad oil
2 tbsp. Parmesan cheese

Mix garlic, salt and pepper with dry mustard.  Stir in lemon juice, salad oil and cheese. 
Place dressing in bottom of salad bowl.  Top with 2 quarts of greens.  Refrigerate. 
Toss before serving.  Add more Parmesan, if desired.

Creamy  House  Salad  Dressing

1 c. mayonnaise
2 tbsp. grated Parmesan cheese
1 tbsp. fresh lemon juice
1 sm. clove garlic, mashed
Salt and pepper to taste

Combine all ingredients and refrigerate at least 2 hours to blend flavors.

Morrison's Fried Chicken

This is from the actual Morrison's recipe book. Note that this is for a food service quantity, and that the measurements are mostly weight measures, in pounds and ounces.

marinade

ingredients:

salt                 1 lb  
msg                  4 oz
garlic               2  oz
pepper               1 oz 
paprika              1 oz 

mix all together with enough ice water to cover chicken. use 8oz mix to 25 lbs chicken; 
soak chicken at least 8 hrs before cooking 
 
Breading
 
flour                5 lbs
baking  powder       7 oz
all season salt mix  4 oz

blend all

Chicken

Take drained but cold chicken to breading mix and coat thoroughly
Let chicken set 15 min
Then fry 350F  12 - 15 min.

Corn & Spam Bake

SPAM's making a comeback in these tough times!

Corn & Spam Bake

2 1/2 c Egg noodles (4 oz.)
1 cn Drained whole kernel corn
1 cn Cream of vegetable soup (10 3/4 oz )
3/4 c Milk
1 ts Salt
3/4 cn Spam, cut into 1 squares (12 oz.)

Cook egg noodles in 2 quarts salted boiling water for 10 minutes; drain and pour 
into deep 9 inch casserole. Mix in rest of ingredients. Top with grated sharp cheese. 
Spread with paprika. Place triangles of Spam around edge. Bake 30 minutes at 350 degrees.
