Brownies with Chocolate Pudding

  Chocolate  Pudding  Brownies

   Ingredients : 
   6 tbsp. butter or margarine
   2/3 c. sugar
   2 eggs
   1/4 c. milk
   1 tsp. vanilla
   1/2 c. flour
   1 (3 3/4 or 4 oz.) pkg. regular chocolate pudding mix
   1/2 tsp. baking powder
   1/4 tsp. salt
   1/2 c. chopped nuts
   Powdered sugar

   Preparation : 
      Cream butter and sugar.  Blend in egg, milk and vanilla.  Stir
   together flour, pudding mix, baking powder and salt.  Add to creamed
   mixture; mix well.  Stir in nuts.  Spread in greased 9 x 9 x 2 inch
   baking pan.  Bake at 350 degrees for 25-30 minutes.  Cool.  Sift
   powdered sugar over top.  Cut into bars.  Makes 24.

   Rocky  Road  Brownies

   Ingredients : 
   1/2 c. flour
   1/2 tsp. baking powder
   1/4 tsp. salt
   2 eggs
   1/3 c. sugar
   1/3 c. margarine, melted
   1/2 tsp. vanilla
   2 pkgs. chocolate pudding mix
      (regular size)
   1/2 c. chopped nuts
   2 c. miniature marshmallows
   1 c. chocolate bits
   3 tbsp. margarine, melted

   Preparation : 
      Sift flour, baking powder, and salt.  Beat eggs until frothy and
   beat in sugar. Add 1/3 cup melted margarine, vanilla, and dry
   ingredients.  Mix well.  Stir in pudding mix and nuts.  Bake in well
   greased pan, 10 x 6 1/4 x 1 1/3 inch at 325 degrees for 20-25
   minutes.  After baking, cover immediately with marshmallows. Melt
   chocolate pieces with 3 tablespoons margarine and spread mixture
   over marshmallows and cool.  Cut into 2 inch squares.

   Chewy  Brownies

   Ingredients : 
   1 pkg. Jello Instant chocolate pudding
   1/2 c. flour
   1/4 tsp. baking powder
   1/3 c. butter or margarine
   2/3 c. sugar
   1-2 eggs
   1 tsp. vanilla
   1/2 c. chopped nuts

   Preparation : 
      Mix contents of package with flour and baking powder.  Melt
   margarine, remove from heat, add sugar.  Beat in eggs, one at a
   time.  Blend in vanilla and pudding mixture.  Stir in walnuts. 
   Spread in greased 8 inch square pan.  Bake at 350 degrees for 35
   minutes.  Cool in pan, cut into bars.  Makes about 18. Delicious and
   easy.

   2 eggs
   2/3 c. oil

      In a large bowl combine pudding, eggs, oil and vanilla and mix
   well.  Then add dry ingredients and mix well.  Spread evenly in
   greased 8 inch square pan.  Bake at 350 degrees for 35 to 45
   minutes.  Cut into squares.

   3/4 c. flour
   1/2 c. sugar
   1/2 tsp. baking powder
   1/4 tsp. salt
   1/3 c. butter, melted
   2 eggs

   Preparation : 
     Put all in baking pan at 350 degrees for 30 to 35 minutes.

Cardamom Balls

  They are a 1" round cookie and frosted with a lemon glaze.  

  I made them twenty years ago from a Christmas cookie receipe I found in 
  a popular magazine.  I've been kicking myself ever since for not saving 
  the receipe!

Hmmmm........ I did find a recipe or two (see below), but these have an egg glaze rather than a lemon glaze. I could not locate one with a lemon glaze.

  Cardamom  Balls

   Ingredients : 
   1/2 c. soft butter
   1/2 c. sugar
   1 egg
   1/4 c. heavy cream
   2 c. sifted flour
   2 tsp. baking powder
   1/4 tsp. salt
   3 tsp. crushed or powdered cardamom
   1 egg, beaten

   Preparation : 
      Cream butter and sugar until light, then add egg, beating until
   thick.  Stir in cream.  Sift flour with baking powder and salt and
   add, with cardamom, to creamed mixture, mixing until stiff dough
   forms.  Chill.  Shape chilled dough into balls, about 1 inch, and
   arrange on lightly greased baking sheet.  Bake at 375 degrees for
   10-12 minutes or until golden.  Cookies may be brushed with egg
   before baking to give shiny glaze.  Makes about 4 dozen.

   2 c. sifted white flour
   2 tsp. baking powder
   3 tsp. crushed or powdered cardamom

   Preparation : 
     Cream butter and sugar until light.  Add egg, beating until thick.
    Stir in milk.  Sift flour with baking powder and add with cardamom
   to creamed mixture, mixing until a stiff dough forms.  Chill
   thoroughly.  Shape chilled dough into small balls (about 1 inch in
   diameter) and arrange on a lightly greased baking sheet.  Bake at
   375 degrees for 10-12 minutes or until golden.  If you wish, you may
   brush cookies with egg before baking to give them a shiny glaze. 
   Makes 48.  '93

Well, I couldn't find one in the site archives, but I did find one elsewhere. See below.

  Cream  Puffs

   Ingredients : 
   1 c. water
   1/2 c. margarine
   1 1/3 to 1 1/2 c. flour
   1/2 tsp. salt
   4 eggs
  Creme Filling:
   1 (14 oz.) can Eagle Brand sweetened condensed milk
   1 1/2 c. cold water
   1 (4 to 6 serving size) pkg. instant vanilla flavor pudding mix
   2 c. whipping cream

   Preparation : 
      Puffs: Heat water and margarine to boiling point, stir 
  in flour and salt.  Take off fire.  Add eggs, 1 at a 
  time and mix well. Shape 1 tablespoon at a time into 
  puffs on greased cookie sheet. Bake at 375 degrees for 
  25 minutes, turn to 325 degrees for 5 minutes.  Cool.  
  Cut off tops and pull out soft dough.  Fill with creme 
  filling and top with favorite chocolate icing. 
  Refrigerate leftovers.  
  Creme Filling: In large bowl, combine Eagle Brand and
  water.  Add pudding mix, beat well.  Chill 5 minutes.  
  Beat whipping cream and fold in.  Chill until firm. 
  

Marshmallow Cream Frosting

Well, I'm a bit puzzled. I looked through quite a few devil's food cake recipes, and I didn't find any that mentioned marshmallow creme frosting. I did find a recipe for marshmallow cream frosting, which is below. But most devil's food cakes have either a fudge frosting (also below), or else they just say "use your favorite frosting".

  Marshmallow Cream Icing 

  1-1/2 c shortening
  2 lbs confectioners sugar
  2 tablespoons marshmallow creme
  1 teaspoon vanilla
  1/2 teaspoon butter flavoring 

  Mix together separately:
  1/2 cup water
  1 teaspoon salt. 

  Cream the shortening and flavorings together. Then add the sugar, a 
  little at a time, until the mixture begins to look like coarse crumbs. 
  Then add salt water a little at a time until the mixture begins to get 
  smooth and becomes the consistency of --icing.

  Minute  Fudge  Frosting  For  Devil's   Food  Cake

   Ingredients : 
   3 tbsp. cocoa
   1 c. sugar
   1/3 c. evaporated skim milk
   1/4 c. margarine
   1/4 tsp. salt
   1 tsp. vanilla extract

   Preparation : 
      Mix first 5 ingredients together.  Bring to a boil and simmer one
   minute. Remove from heat and add vanilla.  Let cool a little then
   beat until right consistency to spread on cooled cake.

  Grandma  Mimi's  Devil's  Food  Cake

   Ingredients : 
   2/3 c. Crisco
   1 1/2 c. sugar
   3 eggs, beaten
   2/3 c. cocoa
   1/2 c. hot milk
   2 c. cake flour, sifted
   1 tsp. salt
   2 tsp. baking powder
   1 tsp. soda
   1 c. thick sour milk
   1 tsp. vanilla--

  FROSTING:--

  1 pkg. powdered sugar, sifted
  2/3 c. cocoa
  1 lg. heaping tbsp. Crisco

   Preparation : 
     Cream together Crisco, sugar and eggs.  Add cocoa and hot milk. 
   Sift together cake flour, salt, baking powder, and soda.  Add
   alternately with sour milk (add 1 tablespoon lemon juice or white
   vinegar to sour, or use buttermilk).  Add vanilla.  Pour into 9x13
   inch pan, greased with butter and floured.  Bake at 350 degrees
   about 35 minutes.  Mix together with boiling water a little at a
   time until right for spreading.  
  

Real Persimmon Pudding

 I am in search of a recipe for a true persimmon pudding, not a 
 bread/cake like concoction.  My grandmother had a huge persimmon 
 tree in her front yard and used to make persimmon pudding on the 
 stovetop every fall.  The outcome was a very dense pudding with 
 the creamy consistency and texture of a pumpkin pie filling.  
 I know it had a little cinnamon and possibly vanilla.

Hi Laura,

I found about 75 persimmon "pudding" recipes. After sorting out those recipes, I found the ones below that would seem to have the consistency of pudding rather than cake. The first one even says that it should have the consistency of "custard". I hope one of these is right. I can't say for sure what the texture of the end result will be from them.

  Persimmon  Pudding

   Ingredients : 
   2 c. Persimmon pulp
   1 1/4 c. granulated sugar
   2 c. all purpose flour
   2 eggs
   1/4 tsp. salt
   2 tsp. baking powder
   1/4 tsp. soda
   1 tsp. vanilla
   1 tsp. cinnamon
   2 1/2 c. sweet milk

   Preparation : 
      Mix eggs, persimmon pulp and sugar well.  Add all dry
   ingredients.  Lastly add milk.  Bake in baking dish at 325 degrees
   for 1 hour or until it tests with a "custard like" texture.

  Persimmon  Pudding

   Ingredients : 
   2 c. pulp
   1 1/2 c. sugar
   1 tsp. cinnamon
   2 c. self-rising flour
   2 c. milk
   2 eggs, beaten
   1 tsp. vanilla
   1 stick butter, melted

   Preparation : 
     Mix dry ingredients.  Mix moist ingredients.  Combine the two
   mixtures.  Bake in a 9 x 13 inch buttered pan at 350 degrees for 1
   hour.  When pudding bubbles in the middle of the pan it is done.

   Persimmon  Pudding

   Ingredients : 
   1 c. sugar
   1 c. flour
   1 egg
   1/2 c. milk
   1 c. persimmon pulp
   1 tbsp. melted butter
   1/2 tsp. cinnamon
   1/4 tsp. salt
   1 tsp. soda
   1 tsp. vanilla

  Sauce:
   1 c. sugar
   1 tbsp. flour
   1 c. boiling water

   Preparation : 
      Sift dry ingredients together.  Mix with the fruit pulp, egg
   yolk, butter and vanilla.  Stir liquid into dry ingredients, add
   beaten egg white.  Bake in shallow covered dish for one hour.  Place
   baking dish in pan of hot water.  Serve with sauce.  Cook until
   thick, add vanilla and butter.

   Persimmon  Pudding

   Ingredients : 
   1 c. persimmon pulp*
   1 c. sugar
   1 egg
   1 c. sifted flour
   1/2 tsp. cinnamon
   1 tsp. baking powder
   1/2 tsp. salt
   1/2 c. buttermilk (dissolve 1/2 tsp.
      soda in this)
   1/2 stick butter
   1/2 c. milk

  Sauce:
   2/3 c. sugar
   2 tbsp. flour
   3/4 c. cream
   Vanilla to taste

   Preparation : 
      Mix pulp, sugar, egg and melted butter.  Sift flour, baking
   powder, cinnamon and salt together.  Add milk alternately with flour
   mixture and beat until smooth.  Add buttermilk (with baking soda)
   and bake in 350 degree oven for about 45 minutes.  Serve plain or
   with sauce.  Cook all together on top of stove.  Pour over baked
   pudding.  *Persimmon pulp is not available in stores.  Make own by
   putting fresh persimmons through a sieve.  May be frozen to use
   throughout the year.

   1/2 tsp. baking powder
   1/4 tsp. cinnamon
   1/2 tsp. vanilla
   2 c. cream or 1 can evaporated milk
   1/2 c. sweet milk

  Topping:
   1 c. evaporated milk
   1 c. sugar
   3 egg yolks, beaten
   1/2 c. butter or margarine

   Preparation : 
      Add sugar to pulp.  Add 2 well beaten eggs, stirring well.  Add
   milk and stir. Add syrup.  Sift flour, salt, soda and baking powder
   and fold into persimmon mixture; beat well.  Add vanilla, cinnamon
   and cream.  Put margarine in pan to melt.  Pour all margarine into
   batter and mix except to grease a 13" x 9 1/4" x 2" pan.  Bake 1
   hour at 350 degrees.  Add all ingredients together, cook and stir
   over medium heat until thickened.
