Hi Jennifer,

I actually have that book myself. I have the cup custard recipe already posted here: 4-25-2011 I just failed to list the link on the H & H page.

The main reason I didn't already have the H & H mashed potatoes recipe posted already is because I have never received a request for it. I usually don't post recipes, even if have them, until I get a request for them. As  popular as H & H recipes are, I should have already posted the mashed potato recipe. I just overlooked it.

Horn & Hardart Mashed Potatoes

Serves 6

6 medium Idaho potatoes
4 tablespoons(1/2 stick) unsalted butter
1 teaspoon salt 
1/4 teaspoon freshly ground white pepper
3/4 cup milk, at room temperature

In a 3-quart saucepan over high heat, heat the potatoes and
enough water to cover them to boiling. Reduce the heat to 
low and simmer approximately 30 minutes, or until fork-tender. 
Drain in a colander and allow the potatoes to sit for 2 minutes, 
to dry completely.

In an electric mixer at low speed, blend the potatoes, butter, 
salt, and pepper for 1 to 2 minutes, until the potatoes are 
completely broken up. Add the milk gradually while whipping.
Whip at high speed for 1 to 2 minutes, until the potatoes are 
light and fluffy.
