This time I'm looking for a recipe for Puerto Rican Mofongo that has been changed 
to a more healthy way of cooking.  All I can find are fried.  Not sautéed, which 
would be o.k., but not deep-fried.

Good morning, Phaedrus:
Your website is fantastic! I just found it last night while searching for some recipes. 
I thought I had lost a recipe for an unusual salad my mother made when I was a child but, 
thankfully, I found it tucked inside an old recipe book. Since I couldn't find it on your 
site, I thought I would share it. It would be interesting to know if anyone has heard of 
it. I couldn't find it on the internet and I spent quite a while looking.
Cheese & Banana Nut Salad with Dressing
In a large salad bowl, gently toss the following:
  6 large chopped bananas - not too ripe
  1 can diced pineapple - reserve juice
  1 lb grated cheddar or Colby cheese
  3/4 lb chopped pecans
Cook the following on medium heat until thickened, stirring constantly to avoid scorching:
  1 cup sugar
  1/4 cup vinegar
  1 stick butter (not margarine)
  2 beaten eggs
Cool and thin with reserved pineapple juice and serve over chilled salad. I recommend 
pouring over individual servings rather than the whole salad. A little lemon juice on 
the bananas will help keep them from browning.

Subject: Maggiano's Chocolate Cherry Zuccotto Cake
Hi Phaedrus, 
I LOVE Maggiano’s Chocolate Cake and I do make it often at home, but this Christmas Season my husband 
took me there as a surprise for our 10yr Anniversary and we shared a this most devious piece of Chocolate 
Cherry Zuccotto Cake …. OMG!!! Talk about Heavenly!!! I think the chocolate cake recipe is the same, but
this was filled w/ this kind of whipped cherry ricotta mousse?? and had this luscious cherry chocolate 
ganache then topped w/ these cherries soaked in ???  … I have to have this recipe, if you could find it 
I would be SO grateful ??

Well, first let’s be sure about what we are looking for. I cannot find any mention at all of a 
“Maggiano's Chocolate Cherry Zuccotto Cake”, not on their menu at: Maggiano's Menu, 
and not mentioned elsewhere on the web.
 
They do have a “Chocolate Cherry Cake” (Not "zuccotto".) listed as a “December Chef’s Feature.” This cake is
described as a chocolate layer cake with “Black Cherries, Raspberry Mascarpone Mousse, Dark Chocolate Fudge Icing.”

The description of Maggiano’s “Chocolate Zuccotto Cake” describes this cake as being “Layered with Sambuca Mousse.”

“Sambuca” is an anise flavored liqueur.
 
I cannot find any mention of them having a “Chocolate Cherry Zuccotto Cake” with cherries and a 
“whipped cherry ricotta mousse” as you describe. 
 
I have a copycat recipe for their Chocolate Zuccotto Cake here: 10-23-2015. 
It is a copycat and does not have the sambuca liqueur in the mousse.
 
I cannot find a recipe or a copycat recipe for their “Chocolate Cherry Cake.” It is a special dessert newly 
added to their menu for the month of December, so it is probably too new for anyone to have created a copycat 
recipe.
 
I’ll post this for reader input.
